上用粉（粳米の粉）、山芋（つくね芋、大和芋など）をたっぷりと砂糖とともに生地に合わせ、白くふんわりと蒸し上げた上用まんじゅう。（薯蕷饅頭）
シンプルな素材だけに生地の捏ね方一つで味が変わってしまうほどのデリケートな和菓子。
中あんには小豆と隠元豆を丁寧に漉した、漉し餡の合わせ餡が上品なお味を引き立てます。
